I'm interested in whether or not you good folk have any good anthologies to recommend. Two I'm personnaly thinking of acquiring are "the Merlin chronicles" by Mike Ashley and Immortal Unicorn by Peter Beagle, a collection of various stories about unicorns.
If you have any, please state what they are about?

Well, if you mean collections of short stories, the books edited by Terry Windling and Ellen Datlow are a good bet.
These are the "The Year's Best Horror and Fantasy" series and their reinvented "Fairy Tales" series. Though the stories here are hit or miss, there are a lot of good stuff in these books.
Also, the YBHaF books also list down the fantasy/ horror stuff that comes out every year so it's pretty helpful to a reader to track down the good ones.

Also have a look at Dreaming Down Under, a collection os short stories by Aussie authors.

There's also the LEGENDS anthology edited by Robert Silverberg. It's a collection of short stories by various fantasy authors based in their respective fantasy worlds: Goodkind in SoT, McCaffrey in Pern, Martin in ASoIaF, Jordan in WoT, Stephen King in The Dark Tower, etc. Very good stuff...

Yes, the Legends book we've mentioned elsewhere as a thread, haven't we? (Not to mention the up and coming sequel!)
It's quite a good overview of some of the big sellers, though as they are all stories set in already created series, I'm not sure personally how much of each series you'd need to know before reading the Legends book.
I enjoyed it, though there are some better than others!
