Well, here are some of my favorites:

-The battle scenes in The Elfstones of Shannara, the demons against the elves and the rest of the mortal races.

-The war in Rage of a Demon King, The Kingdom against the armies of the Emerald Queen.

-Corwin of Amber cheating his way through a swords duel in the 5th book of Amber (forgot the name), he did what he had to do.

-All the battles in A song of ice and Fire.

-Well, Hyperion is sci fi, but the fight between The Shrike and that female terminator bitch that chased Endaymion.

-Matrim Cauthon leads a band of soldiers to a victory over the Aiel and discovers he has a gift for warleading.

-Drizzt Do'udren vs. Artemis Entreri, any will do.

that's all i could think of.

WOT-The battle at Dumai's Wells--Ashaman, Ashaman ASHAMAN!!!

John Marco has a few really great battle scenes in his 2 Tyrants and Kings books

When the hand of God intervenes in the ending of The Stand by Stephen King.

Dave Duncan has some great sword fights in his first 2 King's Blades books

Lord of the Rings where the king gets killed.

And my Fav

"Gardens of the moon" and "Deadhouse Gates", I enjoyed all the battle scenes. Especially in Deadhouse gates.

I have to go with any of the battles in Lord of the Rings, followed by the major battles in the Fionavar Tapestry. The Star Trek novel Spectre has some incredible starship battles, too.

I liked the battles in :
Rage Of A Demon King : which involed Erik von Darkmoor

Silverthorn : The battle on the edge of Elvandar when Jimmy and Arutha and the rest of the troop stopped to face the Moredhel and the Black Slayers.

I liked the duel between Corwin and Eric in the "Nine Preinces In Amber" and there were lots of nice fights in Dragonlance series by Weis & Hickman.
As well, the last battle in the third book of Elenia series by Eddings.

Curse of the Mistwraith - the battle of Tal-Quorin.
Actually, most of Wurts' battles are good.
Brooks does some good wars as well.

AndHile Troy leading the armies of the land against the Raver lead armies of the Despiser in the Illearth War by Stephen donaldson is good.

...and the battle scenes in Shannara and the Riftwar saga...and the best,the battle between Zeddicus and the monster[I don't know the English name]in the begining of "Stone of Tears.

The fight scenes in The Warlords Trilogy (by Bernard Cornwall) were _really_ good. If you haven't read them, th e Warlords is a kind of semi-historical Arthurian series.

Very realistic, very long, very gruesome. It's not like all that tripe high-fantasy where the soldiers run around slashing at each other for a few minutes and then celebrate their victory before marching on to the next. If you like realistic, dark age style battles, definitely read The Warlords. I have been told that the fighting in some of his other books, the 'Sharpe' books (about napoleonic wars) is the same.
