Fiest is great but my library doesn't have much of his work, nor does it have hughart's "bridge of birds" which I've heard is great. That's the crux really, my wife doesn't approve of my penchant for buying tons of books so I've been restricted to my university library. (Interestly, their selection of modern fantasy is pretty weak while they have a lot of the older stuff...Pratt, De Camp, Howard, Anderson.) Also, I think this is a pretty good site for reading ideas-- http://www.strangewords.com/weirdbooks/fantasy100.html

That's the David Pringle list. He actually wrote a book that includes a one or two page essay on each selection, it's worth getting. Note that the selections are in chronological order, not in order of perceived merit. And that he began with 1945 as an arbitrary date.
A better list (also with essays and also 100 books), better because it is more erudite and does not have time limitations, is the list Michael Moorcock and James Cawthorn published.
