How about R. Scott Bakker's Prince of Nothing trilogy? I haven't read it yet, but it is getting rave reviews, and it's next on my list of books to get.

Jack Vance's LYONESSE trilogy is great.

1. Suldrun's Garden
2. The Green Pearl
3. Madouc

Robin Hobb has three excellent, but very long, trilogies - and all of them are set in the same universe: FARSEER, LIVESHIP TRADERS, and TAWNY MAN.

No, I see his point. Trilogies are just the right number of books for a series. :D

could you tell us more about what you've read so far? what you like about fantasy in particular?
"good" is such a contentious word, as we don't always agree on the same authors.

The Lord of the Rings is a good trilogy from what I've heard, but I haven't read it yet. And The Inheritance Trilogy was great! Full of mystery, love, action and fantasy!

When I think of trilogies I automatically first consider 'Lord of the Rings'. It's one of those big landmarks in the genre that everyone navigates by- You owe it to yourself to see what it's all about, if you haven't already.

After that there's a plethora of choices, as discussed in the recommendations thread.

Something I'd definitley recommend is Guy Gavriel Kay's 'Fionnavar Tapestry'. I'm normally not that fond of the "people from our world who cross over to another" concept, but Kay puts a great contemporary spin on it.
