I believe what you are thinking of are his two short stories The Hedge Knight and The Sworn Sword.
They don't star Ser Barristan Selmy, instead they revolve around the story of a hedge knight named Dunk and his squire Egg. These stories originally appeared in the Legends Anthologies, which are now available in paperback (in addition to these George R.R. Martin stories you get several other great short stories by some of fantasy's premier authors) and have also been adapted into graphic novels by Dabel Bros.
They're definitely worth reading and show a cool glimpse into the world before the events of A Song of Ice and Fire.

Hey, I could be wrong! I wouldn't consider myself an expert on Martin, at least not compared to some of the other people roaming the Internet!
There are so many stories to be told in the Song of Ice and Fire universe... Martin could spend the rest of his career just writing short story anthologies set in Westeros and I would be a happy man!

The Hedge Knight and The Sworn Sword are the first two in a planned series of short stories, possibly numbering nine or twelve, telling the story of the Targaryen dynasty before its fall. A young Barristan the Bold is expected to be seen in the later stories in the series.
A potted life history of Barristan the Bold, in the White Book of the Kingsguard, is given in one of Jaime Lannister's chapters at the end of A Storm of Swords.
