What to read now??

Hi folks. Been lurking in the ofrum for quite a while and decided I need to post now.
I know recommendations threads pop up regularly, but what I want is a COMPLETED SERIES that you can recommend for me to read now.
I have been a fantasy fan for a long time now and just recently moved over to Sci-FI (thanks to Stephen R Donaldsons 'Gap' series).
Due to my fantasy upbringing (!) I have a fondness for 'meaty' series. I just find that single novels are rarely deep or complex enough and prefer something I can get lost in for quite a while.

Here is a list of (most of) what I have read so far .....

The gap series
Hyperion/endymon
Enders saga
Saga of the exiles (sort of fantasy/sci-fi crossbreed)
Gateway series
Nights dawn series
Ringworld series

I might give the Stainless steel rat series a go next, but what else do you recommend?
sub-genre is irrelevant, as long as its well written :D

You might enjoy Stephen Baxter's Xeelee Sequence

Raft
Timelike Infinity
Flux
Ring

They each read as standalone novels (Timelike Infinity before Ring is best though) and is accompanied by a short story collection called Vacuum Diagrams. It deal with the future of mankind and their struggle to become dominant race among the lesser races, while fighting a seemingly eternal battle with the Xeelee, who are advanced beyond our wildest dreams.

Raft takes place in the Xeelee universe, but can be read completely alone and is a fantastic piece of world building fiction. The same can be said about Flux.

Timelike Infinity and Ring deal with the evolution and eventual end of most of humanity and are at times highly depressing, but well worth the read.

In all honesty, I would suggest getting Vacuum Diagrams and checking out the story "Blue Shift" which is my favorite. There are also some free short stories available online floating around somewhere.

I also want to find some COMPLETED series. I prefer Space Opera typed stuff.

I really want to read David Weber but apparently he keeps adding onto his various series'. Is the Honor Harrington series fairly satisfying as is or is it all cliffhangers?

I'll be watching this thread because he's asking for what I also want.

Kevin Anderson's series, "Saga of the Seven Suns".
Walter Jon Williams series, "Dread Empire's Fall".
Jack McDevitt's series, "Engines of God".
Anything by Stephen Baxter.
David Brin's Uplift series.

Each book has a particular situation and problem to deal with and mostly solves the particular incident in Honor's life. There is an ongoing war in the background plus politics in Honor's home kingdom and the enemy's.

The war is getting somewhat tiresome after 10 books.

The Vorkosigan series by Lois Bujold is better, there is more variety in the characters and the opponents.
