Clifford Simak has a place in my heart. I read them to my babies until they knew them by heart! As did I.

Outside Over There, Where the Wild Things Are, The Night Kitchen
And of course,
Goodnight Moon

My fifth choice is about a mother and son, and I can't remember the name, but at the end the son is holding her and saying he'll love her for always. (by Judith Viorst, maybe?)

What, no Dr. Seuss fans? I remember being mesmerized by those illustrations as a kid. Robert Lopshire's books have a similar feel.
