Looking for a book I read as a kid

I've tried Google and the local library but no luck. I remember reading this sci-fi book as a kid where an alien comes to earth, takes the form of a skunk. I'm pretty sure the skunk loves peanut butter. There are two kids involved (It's a childrens book - I read it in elementary school) and they eventually learn to read minds, at least a bit. They discover it while one of them is chewing ice and the other is bothered by it.

Anyway, I know it's a long shot, I've been going back and reading a bunch of sci-fi/fantasy books from my childhood and this is one I remember enjoying but cannot, for the life of me, remember what it's called. If you have any ideas at all, that would be great!
