I am curious about rereading. I do a lot of moving around, so every few years I end up getting rid of all the books I have bought over that time. Once settled in a new place, I again begin my "book collection".
I am wondering what fantasy books people have reread.
For me:
Steven Brust : Vlad Taltos series and also the The Khaavren Romances
These series have always been my favorite, every 2 years
Moorcock : pretty much every thing he wrote, about every 2 -4 years
Joel Rosenberg : Guardians of the Flame (usually until the Warrior Lives, after that the series fizzles for me. Also the D'shai books, mainly because They take me back to my teen years. About every 5 years
Martin : ASOIF : Love them and plus I keep hoping A Dance with Dragons will be published, about every 2 years
Fred Saberhagen : The Sword books, I redo this one about every 7 years or so
Barbara Hambley : The unschooled Wizard series, about every 3 years.
And right now, Robert Jordan, though I gave it up after Winter's Heart, though I am again rereading because of possibly seeing the end in the next 3-4 years. I have reread this series maybe 3 or 4 times since it began.
These are standards for me, I also will pick up a book at a used book store or the library that I have read if it catches my eye.

The mark of a really good book IMO is wanting to re-read it.
Even years later. I've read many books more than twice.
To name a few -
Wheel of Time books
SOng of Ice & Fire books
Malazan books of the Fallen
Chalion books by Lois McMasters BUjold
Speaker for the Dead and Xenocide by OS Card
Honor Harrington Books by D Weber
LoTR - Tolkien
Dune books.
And many more stand alones too mumerous to list.

Although I tend to get rid of anything that I didn't like, or don't expect to want to read again, I do have a collection of titles that I intend/would like to read again at some point in the future. Unfortunately, my to read pile is so full that I've yet to run out of new books to read, and have never yet come to a point where I actually feel like I have the opportunity to go back to some old favorites.
Now, before the days of Amazon and a proper amount of money, I used to be lucky if I were given more than a few new books each year. So I re-read what I had a lot. And, I mean, a lot!
A lot of what I re-read wasn't specifically of the fantasy genre, so I'll skip mentioning those books in this topic. Of fantasy though, what I re-read more times than I care to remember was David Eddings' Belgariad series. It was my introduction to the fantasy genre, I loved it, and being one of very few fantasy books/series' that I own, I came back to it time and time again. And loved it just the same each and every time I read it.
These days, as I said, there are far too many books on my to read pile for me to be able to give much time or attention to the "to re-read" pile, but some of those that I own (and would love to re-read) are:
Carol Berg's Rai Kirah series
The Black Jewels Trilogy
Tamir Triad series
Coldfire trilogy
Farseer and Tawny Man Trilogy's
Plus, loads more that I know I'm forgetting (many of which are standalone-slightly more obscure/unknown titles)

Harry Potter series
Laurie J Marks' Elemental Logic series
First two books of Stephen Baxter's Manifold trilogy (I can't stand the final book)
Gemell's three Druss books
Barbara Hambly's Dragonsbane
And many more

Something Wicked This Way Comes by Ray Bradbury (5 or 6 times)
The Circus of Dr. Lao by Charles Finney (4 or 5 times)
The Land of Laughs by Jonathan Carroll (3 times)
At the Mountains of Madness by H. P. Lovecraft (3 or 4 times)
The Case of Charles Dexter Ward by H. P. Lovecraft (2 times)
Quatermass by Nigel Kneale (2 times)
Good Neighbors and Other Strangers by Edgar Pangborn (2 times)

Oh I can't laugh at you...I was recently re-reading Goodkind's Sword of Truth series. Luckily I bumped my head on my desk about halfway through the series and realized what I was doing :p
I'm currently re-reading Harry Potter because I recently got a good deal on box set of books 1-6 (already had Deathly Hallows) from a used book store :)

There are very few books that I reread. I used to read the original Dragonlance Chronicals by Weis and Hickman on an annual basis. But I ended up giving my Omnibus to a student and well, never saw it again as they never finished by the years end and I moved on to another school. I can't think of another Fantasy novel that I read over and over
In techno-thriller or whatever the current subgenre is being called now -
I also have read Tom Clancy's Without Remorse on more than one occasion as Mr. Clark is an impressive character. Plus the way he goes about his revenge is brutal.

I generally don't get rid of books, even if I don't really plan to re-read them. The only time get rid of them is if I just plain didn't like them.
All of the books listed here I read at least once every two years. Some I read at a minimum of once a year.
