I've recently been getting into fantasy books and there are a couple series that I've loved, but I'm not sure where to go from here.:( The thing that I'm looking for in a book besides the obvious(deep characters, interesting story...etc) is that the entire book or series follows 1 character the whole time. I like getting in the character's head enough so you miss the character when the story ends.
Ones I've read so far and loved: The Name of the Wind, Hobb's Fitz books, Harry Potter, Dark Elf trilogy, and the Dresden Files.

Most of the things I've read have multiple POV, so really can't come up with any. I'd say Scott Lynch's Gentlemen Bastards series, but I'm not entirely certain if there are multiple POV... I'm pretty sure there aren't, and if there are is quite minimal I think.
Maybe someone can refresh me on this.

The following should fit the bill, I believe.
The Ria-Kirah Trilogy, beginning with Transformation, by Berg
The Vlad Taltos novels, beginning with Jhereg, by Brust (not sure if this one meets the deep characters criterion, but still enjoyable)
The Recluce Saga, beginning with The Magic of Recluce, by Modesitt (not sure every books in the series follows one point of view, but most do)
The Kushiel's Legacy series, beginning with Kushiel's Dart, by Carey (this series has quite a bit on unconventional sexual content and may not be right for everyone)
I do hope you aren't planning to limit your reading in this way indefinitely, however. You'd be missing out on some truly great fantasy that follows multiple POVs and yet still allows you to get "in the character's head enough so you miss the character when the story ends"

You may be right, but so far in the ones I've taken a shot at bugged me for the most part because I can't stand some of the characters. An example is the Wheel of Time series; I really like most of the characters but some of the POVs (Nynaeve, Elayne, Children of the Light, ) are for the most part boring or irritating and interrupt the POVs i actually want to read. The only multiple POV series I've liked so far is the Song of Ice and Fire series.

Stephen R. Donaldson has authored several series following Thomas Covenant, the Unbeliever. The main character is something of an anti-protagonist. The First and Second Chronicles are complete. The Final Chronicles are through two books of a projected four, IIRC. I regard the books highly, although opinion on them is diverse and varies widely.

I don't endorse PW's use of the term anti-protagonist though, I think he meant anti-hero. An anti-protagonist is every other person but Thomas Covenant :D

D'oh! Anti-hero, yes. Covenant is very hard to like, especially in Lord Foul's Bane.

The Deed of Paksenarrion by elizabeth moon follows the adventures of a lady paladine.
The Curse of Chalion, Paladin of Souls by Lois McMaster Bujold are also character driven and well written [i didn't care much for the third Chalion book, but it's not a problem as the books can be read as standalones].
Sevenwaters books by Juliet Marillier are among my favorites too, with a lot of romance and celtic myths
