I'm looking for short stories or novels about animals/species extinction - I'm thinking of Do Androids Dream of Electric Sheep, for example. If anyone can recommend similar stories, that would be great. Thanks.

How about The Sheep Look Up (http://www.amazon.co.uk/Sheep-Look-Up-John-Brunner/dp/1932100016/ref=sr_1_1?ie=UTF8&s=books&qid=1267921507&sr=1-1) by John Brunner? Quite hard to get hold of these days but one of the first environmental scary books from the 1970's.
There's also The Death of Grass (http://www.amazon.co.uk/Death-Grass-Penguin-Modern-Classics/dp/0141190175/ref=sr_1_1?ie=UTF8&s=books&qid=1267921565&sr=1-1) by John Christopher.
