I can't think of a list right now, but I will mention Matthew Woodring Stover. His fights are simply awesome.

TOLKIEN TOLKIEN Have you all forgotten the battle of Helms Deep? Or how about the attack on Minas Tirith? Orcs catapulting mens heads marked with the lidless eye over the walls of the city killing moral and driving their superiors mad with depression... And how about Samwise Gamgee, gardener from the shire standing up to the worlds most hideous creature unscathed by even the greatest elven warriors. Nobody can move me or inspire in fight scenes as much as Tolkien. However if any of you think their is a greater one, please do share for I'd love to read that authors work.

From my limited knowledge of Fantasy, I'd say Tolkien and George R.R. Martin.Tolkien gives battles that epic feel, while the battle for King's Landing just blew me away.
