I have one simple question. Do publishers like the idea of publishing a book of short stories by one author or several?

Well, both. I think that generally, they prefer anthology style books that consist of short stories by several different authors.
If you're not an already well known and established author thought, then forget about trying to get a book of short stories published. it just won't happen.
Instead, if short stories are your thing, try to get them published in magazines. They're much happier to accept (and pay for!) stories by unknown writers.
