I'm trying to remember the name of a short SF story I read a while back. It involved overpopulation and people assigned to live a day a week, spending the reminder in stasis or something. The hero falls in love with a girl from another day and...

I managed to find the short story after a quick search. It is called "The Sliced-Crosswise Only-On-Tuesday World" and was indeed the first seed of what would evolve to be Farmer's Dayworld (which now I have to procure and devour). Farmer did a lot of that kind of thing; try finding the World of Tiers series after you finish Dayworld.
