Science Fiction anthology from 80s (poss 70s)
I am tearing my hair out.
This anthology was, I'm pretty certain, called 'Sci-Fi!', which makes it
jolly hard to find. It was a thick hardback book with a space scene on the
front. I can, however, recall specific stories (if not their authors) from
within:
- Master Of All The World, in which a young boy is used as a pawn by
aliens who need an empty planet
- The Last Day On Earth, in which a cosmic winter is about to destroy all
life as we know it
- The Turn of a Card, in which a platoon trapped in a cave are defended by
their ageing sargeant
- Eye of the Beholder, about a group of colonists who land on a distant
planet and find the creatures they thought were monsters actually weren't
at all
Plus there was one about intelligent dolphins, one about a sadistic
gameshow, one about giant flies used for labour...I can remember them all
vividly but can't remember the publication details of the anthology in
which they were contained. Can anyone help???

You might try isfdb.org -- they have story titles cross-linked to the collections they've appeared in, so you can try to find a collection including all of the titles you remember.
I could only find two of the titles you listed, though, and there are many called "Eye of the Beholder," so I didn't look through them all.

Startide Rising by david brin comes to mind when you mention intelligent dolphins.
