Charles Dickinson (one kick-ass time travel story and some gen fic)
David L. Martin (with the exception of Facing Rushmore)
Stephen King
Joe Lansdale (especially the Hap and Leonard books)
Margaret Laurence (the Manawaka novels)
Steven Erikson
Dan Simmons (but I couldn't finish A Winter Haunting)
Larry McMurtry (although I thought the Berrybender series was a bit too silly)
Peter Straub (except for Mr. X -- still haven't gotten through that one)

Ronald Dahl (I loved his stories when I was younger! I still read them now!)

Alison Croggon (By far, one of the best fantasy novelist and poets during this day and age)

Bryce Courtenay (Most of his stories are recollections of true events and are incredibly powerful)

J.K. Rowling (I love her stories. But I can't stand the movies, I fell asleep during the last one)

J.R.R Tolkien(I tried to read the first page of Lord of the Rings and was lost by the third word. Love the movies though, very nice!)

Can't miss means you will automatically read anything they put out?
Zelazny and Saberhagen (fantasy that is) when they were alive.
I was reading all Feist's books up until King of Foxes. I could not get into it. I am reading Conclave of Shadows II now though.
Bujold up until the most recent book or two. I perceive them as being a romance/fantasy.

Non SFF - I read pretty much anything Robert Parker (Spenser) puts out, though for years they have been very much "paint by the numbers". I did give up on the latest Sunny Randall book, after a page or two, recently.
